Southern Seafood Gumbo Recipe

Ingredients
  • 3 garlic cloves, minced .
  • 1/4 tsp cayenne pepper .
  • 24 oz V-8 juice (must be the hot & spicy) .
  • 1 medium bell pepper, sliced .
  • 1 lb fish fillets, cut into bite size pieces (I like Talapia) .
  • 1 tbsp olive oil .
  • 1 (14 1/2 oz) can crushed tomatoes .
  • 8 oz tomato sauce .
  • 3 c cooked rice, cooked measurement .
  • 1 c water .
  • 3/4 lb frozen salad shrimp .
  • 1/2 tsp celery seeds .
  • 1 (16 oz) package okra, sliced style .
  • 1 medium onion, sliced

Directions
  • Step #1 Pour olive oil into a heated soup pot.
  • Step #2 Saute the onion, bell pepper, & garlic in the oil until tender, but not over done.
  • Step #3 Add celery seed.
  • Step #4 Add V8 juice, tomatoes, water, tomatoe sauce, okra, & cayenne pepper.
  • Step #5 Bring to a boil & let simmer about 10 mins.
  • Step #6 Stir in fish & cook for approximately 8 more mins.
  • Step #7 Add shrimp & cook for about 5 more mins.
  • Step #8 Place a 1/2 c mound of rice in bowl & ladle gumbo over the rice.
  • Step #9 Serve with a green salad & crusty bread & you have a full meal.
