Nonna's Lemon Ricotta Biscuits Recipe

Ingredients
  • 1 tsp sugar, as needed for sprinkling (or more) .
  • 2 c all-purpose flour .
  • 1 c sugar .
  • 1 tbsp fresh lemon juice .
  • 1/3 c thinly sliced almonds .
  • 1 tbsp grated lemon zest (from 2 lemons) .
  • 1/2 c unsalted butter, softened .
  • 1 c whole milk ricotta cheese .
  • 1/2 tsp salt .
  • 1 large egg .
  • 1/2 tsp baking soda .
  • 1/2 tsp almond extract .
  • 1/2 tsp baking powder

Directions
  • Step #1 Line 12 muffin c with paper liners & preheat your trusty oven to 350°.
  • Step #2 Whisk the flour, baking soda, baking powder, & salt in a medium bowl to mix.
  • Step #3 Using an electric mixer, beat together 1 c sugar, butter, & lemon zest In a large-ish bowl until light & fluffy.
  • Step #4 Beat in the ricotta, then the egg, lemon juice, & almond extract.
  • Step #5 Add the dry ingredients & stir just until mixed (the batter will be thick & fluffy).
  • Step #6 Divide the batter among the prepared muffin c.
  • Step #7 Sprinkle top the almonds & then the remaining 1 tsp of sugar over the muffins.
  • Step #8 Bake until the muffins just become pale golden on top, about 20 mins.
  • Step #9 Cool slightly & serve warm.
