Ingredients
1 tbsp olive oil or vegetable oil .
1 c merlot or zinfandel or nonalcoholic red wine .
1 c currant jelly .
2 tbsps butter or margarine .
1/4 tsp coarse kosher sea salt or salt .
1 (2 1/2 lb) beef tenderloin .
1 tbsp butter or margarine .
1 c sliced mushrooms (3 ozs) .
1 c soft breadcrumbs (about 1 1/2 slice bread) .
1/4 c sliced parsley .
1/2 c crumbled gorgonzola or Roquefort cheese .
Merlot Sauce
Directions
Step #1 Heat oven to 425.
Step #2 Cut tenderloin horizontally down length of beef, about 1/2 " from top of beef, to within 1/2 " of opposite side; open flat.
Step #3 Repeat with other side.
Step #4 Melt butter in 10" skillet over medium high heat.
Step #5 Cook mushrooms in butter until tender & liquid has evaporated.
Step #6 Cool 5 mins.
Step #7 Add bread crumbs, cheese & parsley.
Step #8 Toss to mix.
Step #9 Sprinkle top bread crumb mixture over beef to within 1" of edges.
Step #10 Tightly roll up beef, beginning with long side.
Step #11 Turn small end of beef under about 6" so it cooks evenly.
Step #12 Tie beef with kitchen string at 1 1/2" intervals.
Step #13 Place seam side down on rack in shallow roasting pan.
Step #14 Brush with oil, sprinkle with salt.
Step #15 Insert oven proof thermometer in thickest part of beef.
Step #16 Bake uncovered 30 to 40 mins until thermometer reads at least 140 degrees.
Step #17 Cover up loosely with foil wrap & let rest 15 mins.
Step #18 Temp should rise to 145 degrees.
Step #19 Merlot Sauce:.
Step #20 Heat all ingredients in a 1 qt sauce pan, stirring every once in awhile; reduce heat to low.
Step #21 Simmer uncovered 10-15 mins until reduced & syrupy.
Step #22 Serve on the side with beef.
