Chicken Scarpariella Recipe

Ingredients
  • 1/2 tsp pepper .
  • 1 tbsp parsley, minced .
  • 1/2 c parmesan cheese, grated .
  • 5 garlic cloves, pressed .
  • 2 c half-and-half .
  • olive oil, just enough to coat a large skillet .
  • 1 tsp salt .
  • 2 tsps dried rosemary, crushed .
  • 1 c white wine .
  • vermicelli, cooked .
  • 3 1/2 lbs chicken pieces, bone-in, skinned

Directions
  • Step #1 Wash & pat dry the chicken pieces.
  • Step #2 Srinkle with salt & pepper.
  • Step #3 Heat oil In a large-ish skillet.
  • Step #4 Brown the chicken over high heat.
  • Step #5 Add garlic.
  • Step #6 Lower the heat.
  • Step #7 Saute' chicken & garlic for 10 mins.
  • Step #8 Turning pieces of chicken once or twice.
  • Step #9 Remove excess fat from pan.
  • Step #10 Add parsley, rosemary & wine.
  • Step #11 Simmer over med-low heat until wine evaporates & chicken is done, about 15 mins.
  • Step #12 Remove chicken to a platter.
  • Step #13 Add the half-and-half to the skillet.
  • Step #14 Simmer until reduced by half & thickened.
  • Step #15 Stir often to scrape up pan drippings.
  • Step #16 Return chicken to skillet & cook this until chicken is reheated.
  • Step #17 Sprinkle top with the parmesan cheese.
  • Step #18 Serve over hot vermicelli.
