Spicy Pickled Beans Recipe

Ingredients
  • 2 quarts water .
  • 1 tbsp black peppercorns .
  • 1 tbsp salt .
  • 1/2 lb wax beans, trimmed .
  • 2 tsps fennel seeds .
  • 2 tbsps mustard seeds .
  • 4 fresh dill sprigs .
  • 1-2 tsp crushed red pepper flakes .
  • 1/2 c vodka .
  • 1/2 c sugar .
  • 1/2 lb green beans, trimmed .
  • 4 garlic cloves .
  • 1 1/4 c red wine vinegar (5% acidity) .
  • 2 bay leaves .
  • 1/2 c cider vinegar

Directions
  • Step #1 Bring 2 quarts water & salt to a boil In a large-ish saucepan.
  • Step #2 Add beans; cook 4 mins or until crisp-tender.
  • Step #3 Drain & place this In a large-ish bowl filled with ice water.
  • Step #4 Combine red wine vinegar & remaining ingredients in a medium saucepan.
  • Step #5 Bring to a boil; cook 1 min or until sugar disolves.
  • Step #6 Pour over beans; cover & marinate in the refrigerator at least 24 hrs OR place beans in pint jars; remove bay leaves; pour marinade into pint jars & seal.
  • Step #7 Process for 15 min in a boiling water bath.
