Coconut Rice Salad Recipe

Ingredients
  • 1/4 c slivered almonds, toasted
  • 1 (10 oz) can unsweetened coconut milk
  • 2 large limes, juiced
  • 2 tbsps peanut butter
  • 1 tsp curry paste
  • 2 3/4 c water
  • 1 tsp fish sauce
  • 2 c basmati rice
  • 1/4 c flaked coconut, toasted
  • 1/4 c sesame oil
  • 1 clove garlic, crushed
  • 1/2 c raisins

Directions
  • Step #1 In a saucepan, mix the rice, coconut milk & water.
  • Step #2 Bring to a boil, then cover & reduce heat to low.
  • Step #3 Simmer for 15 to 20 mins, or until the rice has absorbed all of the liquid.
  • Step #4 Set aside to cool down.
  • Step #5 In a small bowl, sesame oil, fish sauce, stir this together the lime juice, peanut butter, curry paste & garlic.
  • Step #6 Taste, & adjust the flavor of the dressing to your liking.
  • Step #7 When the rice has cooled, stir in the the dressing along with the coconut, raisins & almonds.
  • Step #8 Refrigerate for at least 1 hr, & up to one day.
