Step #1 In a saucepan, mix the rice, coconut milk & water.
Step #2 Bring to a boil, then cover & reduce heat to low.
Step #3 Simmer for 15 to 20 mins, or until the rice has absorbed all of the liquid.
Step #4 Set aside to cool down.
Step #5 In a small bowl, sesame oil, fish sauce, stir this together the lime juice, peanut butter, curry paste & garlic.
Step #6 Taste, & adjust the flavor of the dressing to your liking.
Step #7 When the rice has cooled, stir in the the dressing along with the coconut, raisins & almonds.
Step #8 Refrigerate for at least 1 hr, & up to one day.
