Low-carb, High-protein Lemon Souffle Recipe

Ingredients
  • 2 tbsps lemon juice (to taste) .
  • 1/4 tsp cream of tartar .
  • 1 egg, separated .
  • 1/2 c low fat cottage cheese .
  • 1 tsp lemon zest, grated (to taste) .
  • 2 (1 g) packets Splenda sugar substitute

Directions
  • Step #1 Beat egg white with cream of tartar until stiff but not dry.
  • Step #2 In a food processor/blender mix the remaining ingredients.
  • Step #3 Fold egg white into cottage cheese mixture.
  • Step #4 Spoon mixture into 2 small (about 5" diameter) ungreased ramekins.
  • Step #5 Bake at 300F for about 30 mins, or until knife inserted off-center comes out clean.
