Pronoti's Lentil Soup Recipe

Ingredients
  • 1 cm piece cinnamon sticks .
  • 1/4 tsp white pepper .
  • 1/2 tsp ground paprika .
  • sliced fresh parsley .
  • 1/2 tsp mustard seeds .
  • 1 bay leaf .
  • 1-2 tsp salt .
  • 1 (200 g) can sliced tomatoes .
  • 125 g frozen spinach, thawed & sliced .
  • 200 ml red lentils .
  • 1-2 tbsp butter or oil .
  • 1 garlic clove, crushed .
  • 2 onions, finely sliced .
  • 1/2 tsp curry powder .
  • fresh lemon juice (optional)

Directions
  • Step #1 Rinse dry lentils well.
  • Step #2 Measure 900-1000 ml water into a saucepan, add lentils & let simmer, covered, for about 30 mins, or until the lentils are mushy.
  • Step #3 (They will not absorb all the water: do not drain!).
  • Step #4 Heat butter or oil in a skillet & cook onions & garlic until softened & lightly browned.
  • Step #5 Add all spices & stir.
  • Step #6 Add canned, covered, sliced tomatoes & let the mixture simmer, for 15 mins.
  • Step #7 Add spinach & cook this until spinach is softened.
  • Step #8 Remove from heat; remove the cinnamon stick & bay leaf.
  • Step #9 Combine cooked lentils (with liquid) & the onion-spinach mixture.
  • Step #10 Add salt to taste, sliced fresh parsley, & stir well to mix.
