Cran Apple Crumble Recipe

Ingredients
  • 1 (12 oz) package frozen cranberries .
  • 5 medium tart apples, peeled & cut into 1/2 inch slices .
  • 2 tbsps quick-cooking tapioca .
  • 2 tbsps butter .
  • 1 c slivered almonds, toasted .
  • 2 tbsps honey .
  • 4 tsps orange zest .
  • 3/4 c brown sugar .
  • 3 tbsps almond paste .
  • 1 1/2 c flour (all purpose) .
  • 1/2 tsp ground nutmeg .
  • Topping .
  • 1 1/2 tsps ground cinnamon .
  • 1/2 c cold butter .
  • 1 c sugar, divided .
  • 1 c orange juice .
  • 2 tbsps maple syrup

Directions
  • Step #1 In a sauce pan, mix orange juice, 3/4 c of sugar & orange peel; mix well.
  • Step #2 Bring to a boil.
  • Step #3 Reduce heat; simmer, uncovered, for 5 mins, stirring every once in awhile.
  • Step #4 Add cranberries; simmer, uncovered, for 8 to 10 mins or until berries begin to pop.
  • Step #5 Remove from heat.
  • Step #6 Melt butter In a large-ish saucepan.
  • Step #7 Stir in syrup, honey & remaining sugar.
  • Step #8 Add apples; cook over med heat for 5 mins.
  • Step #9 Remove from heat; stir in the cranberry mixture.
  • Step #10 Sprinkle top with tapioca; mix carefully.
  • Step #11 Let stand 15 mins.
  • Step #12 Transfer to a greased 13 x9 inch baking dish.
  • Step #13 For topping, brown sugar, cinnamon & nutmeg in a bowl, mix the flour, cut in butter & almond paste until mixture resembles coarse crumbs.
  • Step #14 Sprinkle top crumb mixture & almonds over cranberry mixture (pan will be full!).
  • Step #15 Bake at 400F degrees for 15 to 20 mins or until bubbly around the edges.
