Step #1 Combine flour, corn meal, baking powder & salt in mixing bowl.
Step #2 In separate bowl, mix eggs, milk & butter.
Step #3 Add the liquid ingredients to the dry ingredients & stir until the lumps disappear.
Step #4 Pour batter in uniform amounts onto a hot, greased griddle.
Step #5 When cakes are full of bubbles, turn with a pancake turner & brown other side.
Step #6 Turn only once.
Step #7 (optional) If you want kick it up a notch dice up a hot pepper & add it to the batter.
