Linguine With Clams, Pancetta, Chili And White Wine Recipe

Ingredients
  • salt .
  • 2 shallots, thinly sliced .
  • 3/4 tsp crushed red pepper flakes, crumbled or 2 dried chilies, crumbled .
  • 2 c white wine .
  • 2 lbs clams .
  • 1 lb linguine .
  • pepper .
  • 1/4 c parsley, sliced .
  • 3 tbsps olive oil .
  • 2 garlic cloves, minced .
  • 1/4 lb pancetta, thinly sliced

Directions
  • Step #1 Cook pasta as directed.
  • Step #2 Drain.
  • Step #3 Meanwhile in a hot deep skillet, heat olive oil.
  • Step #4 Add pancetta.
  • Step #5 Fry until golden.
  • Step #6 Add shallots, garlic & crushed red pepper flakes to skillet.
  • Step #7 Stir well.
  • Step #8 Sautee until veggies are tender about 3 mins.
  • Step #9 Add clames & white wine.
  • Step #10 Bring to boil.
  • Step #11 Cook until clams open.
  • Step #12 Discard any that have not opened.
  • Step #13 Remove from heat & add linguine,parsley, salt & pepper.
  • Step #14 Toss until all is mixd well.
  • Step #15 Serve.
