- 4 tsps fresh cilantro .
- 4 slices toasted bread, cut into cubes .
- 2 stalks scallions .
- 2 c water .
- 1/8 tsp pepper (optional) .
- salt .
- 4 eggs
Directions
- Step #1 Chop the scallions & cilantro into small pieces.
- Step #2 In a stockpot add the water, milk & salt.
- Step #3 When the soup boils, crack the eggs & add them carefully to the soup without breaking the yolk.
- Step #4 Cover up the pot & let it boil for one min.
- Step #5 Place at the bottom of each soup dish one tsp of scallions & coriander and, from the pot, carefully place one cooked egg.
- Step #6 Then add the boiling broth.
- Step #7 Serve the soup with bread.
