Changua - A Colombian Breakfast Dish Recipe

Ingredients
  • 2 c milk .
  • 4 tsps fresh cilantro .
  • 4 slices toasted bread, cut into cubes .
  • 2 stalks scallions .
  • 2 c water .
  • 1/8 tsp pepper (optional) .
  • salt .
  • 4 eggs

Directions
  • Step #1 Chop the scallions & cilantro into small pieces.
  • Step #2 In a stockpot add the water, milk & salt.
  • Step #3 When the soup boils, crack the eggs & add them carefully to the soup without breaking the yolk.
  • Step #4 Cover up the pot & let it boil for one min.
  • Step #5 Place at the bottom of each soup dish one tsp of scallions & coriander and, from the pot, carefully place one cooked egg.
  • Step #6 Then add the boiling broth.
  • Step #7 Serve the soup with bread.
