Ingredients
1 pinch salt .
1 small onion, sliced .
1 (10 oz) package frozen spinach, thawed & squeezed very dry .
1/4 tsp pepper .
1 tbsp olive oil .
1 tbsp olive oil .
8 slices good white bread, cubed (day-old works best) .
1/2 tsp ground thyme .
1 (14 1/2 oz) can sliced tomatoes, drained .
1 dash pepper .
1 3/4 c half-and-half cream or light cream .
1/2 c dry white wine .
1 tbsp butter or margarine .
1 1/2 c grated swiss cheese or gruyere cheese .
3/4 tsp salt .
1 small onion, sliced .
1 tbsp brown sugar .
1 tbsp dried parsley .
Onion-Tomato Sauce .
6 large eggs .
1 tbsp butter
Directions
Step #1 Spray an 8-inch square baking dish with cooking spray.
Step #2 Saute onion in butter & oil until translucent.
Step #3 Add wine & reduce by half.
Step #4 Mix in spinach & toss to coat with the sauce.
Step #5 While the onion & wine are cooking, beat the eggs, half-n-half or cream, salt, thyme, & pepper together In a large-ish mixing bowl.
Step #6 Once the spinach is cooked & tossed, add it to the egg mixture & stir.
Step #7 Add the cheese & stir.
Step #8 Add the bread & stir.
Step #9 Pour the bread/spinach mixture into the prepared baking dish.
Step #10 Cover up tightly with foil wrap & put in the fridge overnight.
Step #11 On serving day, preheat your trusty oven to 350°F Bake the bread pudding for 45 mins, covered.
Step #12 Remove the foil wrap & bake for 10-15 mins more, until lightly browned.
Step #13 Let the pudding rest for 10-15 mins before cutting into pieces.
Step #14 While Bread Pudding bakes, prepare the ingredients for the sauce.
Step #15 For the Onion & Tomato Sauce, saute the onion in oil & butter.
Step #16 Add the brown sugar & cook this until onion caramelizes.
Step #17 Add tomatoes, salt, pepper & parsley.
Step #18 Heat through.
Step #19 Taste & adjust seasoning, if needed.
Step #20 Serve with the bread pudding.
