Mint Chocolate Chip Biscotti Recipe

Ingredients
  • 8 tbsps softened butter .
  • 2 tsps baking powder .
  • 3/4 c sugar .
  • 2 tsps pure peppermint extract or 4 tbsps pepermint liqueur .
  • 2 large eggs .
  • 1 tsp vanilla extract .
  • 1 c semi-sweet chocolate chips .
  • 1/2 tsp salt .
  • 3 c all-purpose flour

Directions
  • Step #1 Cream the butter & sugar with a wooden spoon until fluffy.
  • Step #2 Beat in eggs & add extracts.
  • Step #3 Sift together flour, salt, & baking powder.
  • Step #4 Add to butter/sugar mixture, mixing thoroughly.
  • Step #5 Dough will be stiff.
  • Step #6 Use back of spoon to aid in mixing, or you can use & electric mixer on LOW speed.
  • Step #7 Stir in chocolate chips.
  • Step #8 Divide dough into thirds.
  • Step #9 Drop each third by spoonfuls onto a sheet of plastic wrap or waxed paper.
  • Step #10 Shape dough into logs aobut 2 x 10 x 1-inch high.
  • Step #11 Wrap plastic neatly & tightly around the log, closing long sides first, then the ends.
  • Step #12 Place in freezer for 10-15 mins.
  • Step #13 Preheat oven ot 350°F Line a large baking sheet with parchment paper or foil wrap.
  • Step #14 Unwrap the logs & place them on the lined sheet.
  • Step #15 Bake for 25 mins, until logs are lightly browned.
  • Step #16 Remove from oven.
  • Step #17 Reduce heat to 300°.
  • Step #18 Slide paper or foil wrap with logs off baking sheet & onto a cutting board.
  • Step #19 Let cool for 5 mins.
  • Step #20 Using a thin sharp knife (I use a serrated knife), cut logs at an angle into slices about 3/4- to 1-inch wide.
  • Step #21 Slice paper & slices back onto baking sheet.
  • Step #22 Lay each cookie slice on its side.
  • Step #23 Return to oven.
  • Step #24 Bake 10 mins.
  • Step #25 Remove from oven.
  • Step #26 Turn each cookie slice to the opposite side & bake again for 10 mins.
