Basic Red Chilli Paste For Basic In
Ingredients
2 tbsps bright red paprika .
10-12 hot dried red chilies (of the long cayenne variety) .
fresh ground white pepper .
1/4 tsp shrimp paste, sliced or anchovies, from a can sliced .
1/2 tsp ground coriander .
1/2 tsp ground cumin .
1 slice fresh kaffir lime rind (I've never used it) .
5 garlic cloves, peeled & sliced .
1 tbsp fresh lemongrass, that has been thinly sliced crossways .
6-8 coriander roots, washed well & coarsly sliced .
3 slices galangal or ginger (thin slices, fresh or frozen)
Directions
Step #1 Soak the chillies in 5 tbsps hot water for 1-2 hrs.
Step #2 (You could also put them in a microwave oven for 2-3 mins & then let them sit for 20-30 mins).
Step #3 Put the chillies together with their soaking liquid, into a mixer, along with all the remaining ingredients in the order listed.
Step #4 Blend, pushing down with a rubber spatula as many times as necessary, until you have a smooth paste.
Step #5 What you do not use as soon as possible should be put in the fridged or frozen.
