Okra Stir-fry Recipe

Ingredients
  • Marinade .
  • soy sauce, as needed .
  • curry powder, to taste .
  • 1/2 lb boneless chicken, cut into cubes .
  • balsamic vinegar (a splash) .
  • 1/2 red bell pepper, cut into cubes .
  • 1 lb fresh okra pods .
  • minced ginger, as needed .
  • 1/2 green bell pepper, cut into cubes

Directions
  • Step #1 Marinate the chicken & peppers in the soy sauce, minced ginger, & balsamic vinegar.
  • Step #2 Cut the heads & tails off the okra & cut into 1/4 inch rounds.
  • Step #3 Dump them in a bowl & don't season them! Stir-fry the chicken until about 2/3 done, pull chicken out & set aside.
  • Step #4 Add oil, then the okra.
  • Step #5 Stir like crazy.
  • Step #6 Your goal is little green things that look like they are trying to be a nice golden brown.
  • Step #7 If you cook the okra just right, it is great.
  • Step #8 Under or over-cook it, it is great.
  • Step #9 Throw the chicken back in & stir.
  • Step #10 Add the peppers.
  • Step #11 Toss in about a tsp of curry powder for fun.
  • Step #12 Serve over rice or with mashed potatoes.
