Chocolate Lebkuchen Recipe

Ingredients
  • 2 3/4 c all-purpose flour
  • 2 eggs, beaten
  • 1/2 c candied mixed fruit, sliced
  • 1/4 c cinnamon red hot candies
  • 2 tsps ground cardamom
  • 1/4 c green decorator sugar
  • 2 1/2 tbsps orange juice
  • 1 tsp baking powder
  • 1 1/4 c white sugar
  • 2 tbsps water
  • 2 c semisweet chocolate chips
  • 2 tsps ground cinnamon
  •  
  • 1/4 c orange juice
  • 3/4 c honey
  • 1 tsp ground cloves
  •  
  • 1 1/2 c confectioners' sugar
  • 1 tsp baking soda
  • 1 c sliced almonds

Directions
  • Step #1 Combine sugar, honey & water in a large saucepan.
  • Step #2 Bring to a rolling boil, then remove this from the heat & set aside to cool.
  • Step #3 In a medium bowl, candied fruit, stir this together the honey mixture with the chocolate chips, eggs, almonds, & orange juice.
  • Step #4 Sift together the flour, cinnamon, cardamom, cloves, baking soda & baking powder; stir in theto the fruit & nut mixture.
  • Step #5 Tightly cover the bowl, & put in the fridge for 2 to 3 days to mix the flavors.
  • Step #6 Preheat oven to 325F degrees F (165 degrees C).
  • Step #7 Grease & flour a 10x15 inch jellyroll pan.
  • Step #8 Spread the dough evenly into the prepared pan.
  • Step #9 Bake for 35 to 40 mins in the preheated oven.
  • Step #10 Cool & frost with the orange frosting.
  • Step #11 To make the orange frosting, put the confectioners' sugar in a small bowl, & beat in the orange juice 1 tbsp at a time until the desired consistency is reached.
  • Step #12 Spread over the cooled bars.
  • Step #13 Cut bars into diamond shapes, & place cinnamon candies on top then sprinkle with the green sugar.
