Peach And Prosciutto Salad Recipe

Ingredients
  • 1 peach .
  • 2 tbsps cider vinegar or white wine vinegar .
  • 12 c baby spinach or mesclun .
  • 1/4 tsp salt .
  • 3 peaches .
  • 3 tbsps pine nuts, toasted (optional) .
  • 6 slices prosciutto .
  • 3 green onions .
  • 1/3 c vegetable oil

Directions
  • Step #1 For dressing, peel peach.
  • Step #2 Coarsely chop.
  • Step #3 Place in a mixer or food processor/blender.
  • Step #4 Add vinegar & salt.
  • Step #5 Whirl until puréed, then add oil & whirl.
  • Step #6 Dressing will be quite thick.
  • Step #7 It will keep well, covered & put in the fridged, up to 3 days.
  • Step #8 Just before serving, place spinach in a very large bowl.
  • Step #9 Slice prosciutto into thin strips.
  • Step #10 Peel peaches, if you wish.
  • Step #11 Slice in half, then thinly slice into wedges.
  • Step #12 Thinly slice onions.
  • Step #13 Add all to spinach.
  • Step #14 Drizzle with dressing & sprinkle with nuts.
  • Step #15 Toss to evenly mix.
