2 medium onions, halved lengthwise, then cut lengthwise into 1/4-inch-wide strips .
1/4 c extra-virgin olive oil .
2 red bell peppers, cut lengthwise into 1/4-inch-wide strips
Directions
Step #1 Break matzos into roughly 1-inch pieces into a colander, then rinse under hot tap water until pieces are softened, 1 to 2 mins.
Step #2 Let stand 5 mins.
Step #3 Lightly beat eggs with salt, pepper, & 1 tbsp dill In a large-ish bowl & stir in the matzos until coated well.
Step #4 Cook onions & peppers in oil in a 12-inch heavy nonstick skillet over moderate heat, until they begin to brown, stirring every once in awhile, 8 to 10 mins.
Step #5 Add matzo mixture, until matzos are well browned, stirring frequently & breaking up clumps, then increase heat to moderately high & sauté, about 17 mins.
Step #6 Spice up with salt, then sprinkle with remaining 1/2 tbsp dill.
