Savory Red Pepper And Onion Matzo Brei Recipe

Ingredients
  • 1/4 tsp black pepper .
  • 6 (6 inch) unsalted matzos .
  • 1 1/2 tbsps fresh dill, sliced .
  • 6 large eggs .
  • 1/2 tsp salt .
  • 2 medium onions, halved lengthwise, then cut lengthwise into 1/4-inch-wide strips .
  • 1/4 c extra-virgin olive oil .
  • 2 red bell peppers, cut lengthwise into 1/4-inch-wide strips

Directions
  • Step #1 Break matzos into roughly 1-inch pieces into a colander, then rinse under hot tap water until pieces are softened, 1 to 2 mins.
  • Step #2 Let stand 5 mins.
  • Step #3 Lightly beat eggs with salt, pepper, & 1 tbsp dill In a large-ish bowl & stir in the matzos until coated well.
  • Step #4 Cook onions & peppers in oil in a 12-inch heavy nonstick skillet over moderate heat, until they begin to brown, stirring every once in awhile, 8 to 10 mins.
  • Step #5 Add matzo mixture, until matzos are well browned, stirring frequently & breaking up clumps, then increase heat to moderately high & sauté, about 17 mins.
  • Step #6 Spice up with salt, then sprinkle with remaining 1/2 tbsp dill.
