5 Points - Curried Chicken And Mango Wraps Recipe

Ingredients
  • 1/2 c finely shredded romaine lettuce .
  • 1/2 tsp salt .
  • 1 ripe mango, peeled & cut into 1/2-inch slices .
  • 1 red onion, thinly sliced .
  • 1 tsp curry powder .
  • 1/2 tsp ground coriander .
  • 1/4 tsp ground pepper .
  • 2 large flour tortillas (fat-free) .
  • 3-4 lbs boneless skinless chicken breast halves .
  • 1 tsp canola oil

Directions
  • Step #1 Cut chicken into 1/4-inch wide slices on a slight diagonal.
  • Step #2 Heat oil in large nonstick skillet over med-heat/flame.
  • Step #3 Add onion & cook, stirring every once in awhile, until softened, about 4 mins.
  • Step #4 Add curry powder & coriander, until fragrant, cook, stirring constantly, about 1 min.
  • Step #5 Increase heat to medium-high, salt, & add the chicken, & pepper.
  • Step #6 Cook, until chicken is cooked through & most of the liquid evaporates, stirring every once in awhile, about 7 mins.
  • Step #7 Remove pan from heat, stir in the the mango, & let this stand 10 min to cool.
  • Step #8 Spoon half the filling onto each tortilla, top this with lettuce, & roll up.
  • Step #9 Cut each roll in half on slight diagonal.
  • Step #10 5 points per serving (1/2 wrap).
