Lamb With Pears Recipe

Ingredients
  • 2-3 pears, quartered & seeded (skin left on) .
  • 1/2 tsp salt (more or less to taste) .
  • 1 1/2 tsps ground ginger .
  • 3 tbsps grapeseed oil .
  • 1 1/2 tsps curry powder (yellow) .
  • 1/2 tsp saffron .
  • 1 tbsp butter .
  • 12 scallions, whole .
  • 1 tbsp grapeseed oil .
  • 1/4 tsp black pepper .
  • 1 1/2 lbs lamb shoulder (cut into 1.5 inch steaks)

Directions
  • Step #1 In a large saucepan, brown the scallions in the grape seed oil.
  • Step #2 Add the Lamb steaks & brown on both sides.
  • Step #3 Put enough water in the sauce pan to half cover the meat & scallions.
  • Step #4 Sprinkle top in the spices, stir until well mixed, & let simmer.
  • Step #5 In another pan mix the butter with the remaining grape seed oil.
  • Step #6 Make sure the butter doesn’t burn or brown.
  • Step #7 Add the sliced pear & caramelize the fleshy parts, NOT the skin.
  • Step #8 Add this to the Lamb & scallions.
  • Step #9 Cover up & let simmer until done to your liking.
  • Step #10 Serve with roti, paratha, or boiled potatoes.
  • Step #11 Goes well greek salad, tabouli, or chick-pea salad on the side.
