Ingredients
1/2 tsp ground black pepper .
1/2 c seasoned bread crumbs .
2 tsps hot pepper sauce .
1/4 tsp salt .
1/2 c ground almonds .
8 (5 oz) skinless chicken thighs (bone-in) .
1/2 c low-fat buttermilk
Directions
Step #1 Preheat oven to 425°F.
Step #2 Line roasting pan with foil wrap, spray with nonstick cooking spray.
Step #3 Combine buttermilk & hot pepper sauce in 9x13-inch baking dish.
Step #4 Place chicken in buttermilk mixture, turning to coat, set aside.
Step #5 Combine the bread crumbs, almonds, salt, pepper on a shallow plate.
Step #6 Dip the chicken into the crumb mixture, turning to coat all sides.
Step #7 Discard excess buttermilk mixture & bread crumb mixture.
Step #8 Place chicken on rack & lightly spray with nonstick spray.
Step #9 Bake 20 mins, then lightly spray chicken again with nonstick spray.
Step #10 Bake until chicken is golden & thermometer reads 180°F when inserted in thigh, about 25 mins longer.
Step #11 5 Points per serving (1 chicken thigh).
