5 Points - Spicy Oven Fried Chicken Recipe

Ingredients
  • 1/2 tsp ground black pepper .
  • 1/2 c seasoned bread crumbs .
  • 2 tsps hot pepper sauce .
  • 1/4 tsp salt .
  • 1/2 c ground almonds .
  • 8 (5 oz) skinless chicken thighs (bone-in) .
  • 1/2 c low-fat buttermilk

Directions
  • Step #1 Preheat oven to 425°F.
  • Step #2 Line roasting pan with foil wrap, spray with nonstick cooking spray.
  • Step #3 Combine buttermilk & hot pepper sauce in 9x13-inch baking dish.
  • Step #4 Place chicken in buttermilk mixture, turning to coat, set aside.
  • Step #5 Combine the bread crumbs, almonds, salt, pepper on a shallow plate.
  • Step #6 Dip the chicken into the crumb mixture, turning to coat all sides.
  • Step #7 Discard excess buttermilk mixture & bread crumb mixture.
  • Step #8 Place chicken on rack & lightly spray with nonstick spray.
  • Step #9 Bake 20 mins, then lightly spray chicken again with nonstick spray.
  • Step #10 Bake until chicken is golden & thermometer reads 180°F when inserted in thigh, about 25 mins longer.
  • Step #11 5 Points per serving (1 chicken thigh).
