Ingredients
1/2 tbsp dried thyme .
3 tsps lemon juice .
6 (8 oz) red snapper fillets .
1 red pepper (charred, skinned, sliced) .
5 mint leaves .
1 tbsp olive oil .
1 large red onion .
2 garlic cloves .
1/8 tsp cayenne
Directions
Step #1 Saute onion in olive oil until golden.
Step #2 Add remaining ingredients (except fish) & let simmer 10 mins.
Step #3 Pour sauce over snapper fillets & bake, covered, in a 350°F oven for 18 mins.
Step #4 Serve over couscous.
