Egyptian Red Snapper In Red Pepper Mint Sauce Recipe

Ingredients
  • 1/2 tbsp dried thyme .
  • 3 tsps lemon juice .
  • 6 (8 oz) red snapper fillets .
  • 1 red pepper (charred, skinned, sliced) .
  • 5 mint leaves .
  • 1 tbsp olive oil .
  • 1 large red onion .
  • 2 garlic cloves .
  • 1/8 tsp cayenne

Directions
  • Step #1 Saute onion in olive oil until golden.
  • Step #2 Add remaining ingredients (except fish) & let simmer 10 mins.
  • Step #3 Pour sauce over snapper fillets & bake, covered, in a 350°F oven for 18 mins.
  • Step #4 Serve over couscous.
