Mini Walnut Soda Breads Recipe

Ingredients
  • 2 c whole wheat flour .
  • 1 c chilled buttermilk .
  • 1 c unbleached all purpose flour .
  • 1/4 c chilled unsalted butter, cut into 1/2-inch pieces .
  • 1/4 c dark brown sugar (packed) .
  • 1 tsp salt .
  • 1 tsp baking soda .
  • 1 large egg .
  • 2 tbsps mild-flavored light molasses .
  • 1 c walnuts, toasted, sliced

Directions
  • Step #1 Preheat oven to 375°F & lightly flour large baking sheet.
  • Step #2 Whisk first 5 ingredients in large bowl to mix well.
  • Step #3 Add butter & rub in with fingertips until mixture resembles coarse meal.
  • Step #4 Mix in toasted, sliced walnuts.
  • Step #5 Whisk buttermilk, egg & molasses in small bowl.
  • Step #6 Gradually add buttermilk mixture to flour mixture, stirring until medium-firm dough forms.
  • Step #7 Turn dough out onto lightly floured surface.
  • Step #8 Knead until dough comes together, about 6 turns.
  • Step #9 Flatten dough into disk.
  • Step #10 Cut into 6 wedges.
  • Step #11 Shape each wedge into ball.
  • Step #12 Place on prepared sheet, spacing evenly apart.
  • Step #13 Flatten each to 3-inch round.
  • Step #14 Using sharp knife, cut shallow X in top of each round.
  • Step #15 Bake breads until golden & tester inserted into center comes out clean, about 30 mins.
  • Step #16 Transfer to rack.
  • Step #17 Serve warm or at about room temp.
