Step #1 Mix pork with light soy, sugar, cornflour & chilli sauce & set aside for 15 mins.
Step #2 Soak noodles in warm water for 15 mins until soft, drain.
Step #3 Heat oil in wok, add fresh chilli & spring onions, then pork & its marinade, stirring well.
Step #4 When meat starts to brown add the drained noodles & stir well.
Step #5 Add dark soy sauce & chicken stock/water & continue to cook for around 10 mins until the noodles absorb all the liquid.
