Pasta In Sausage, Crimini, And Tomato Cream Sauce Recipe

Ingredients
  • 10 medium cremini mushrooms, sliced .
  • 1/2 c onions, sliced .
  • 1 tsp rosemary .
  • 1/2 c parmesan cheese, freshly grated .
  • 1 (16 oz) can sliced & peeled tomatoes, drained .
  • 12 oz pasta, Bow-Tie or penne .
  • 1 lb hot Italian sausage, ground .
  • 2 garlic cloves, minced .
  • 1 c heavy cream .
  • 2 tbsps butter .
  • 1 tsp thyme

Directions
  • Step #1 In a large skillet over med-heat/flame, melt butter & cook onions until they start to soften, stirring frequently.
  • Step #2 Add mushrooms & garlic to skillet.
  • Step #3 Cook, stirring frequently, until mushrooms soften & onions begin to turn translucent (about 5 mins).
  • Step #4 At this point, bring water to boil In a large-ish pot.
  • Step #5 Add pasta & cook according to package directions.
  • Step #6 Shoot for an al dente pasta, as it will hold up better in the sauce.
  • Step #7 Add ground sausage to skillet and, using a spatula, break it into chunks as it cooks.
  • Step #8 Adjust temperature as needed to thoroughly cook the sausage.
  • Step #9 When sausage is browned, drain any drippings off of the skillet.
  • Step #10 Return to medium heat & add drained tomatoes.
  • Step #11 When tomatoes have heated through, add cream, thyme & rosemary.
  • Step #12 Bring to a simmer & reduce heat to med-low.
  • Step #13 Simmer until sauce thickens (about 5 mins).
  • Step #14 Remove from heat & add cheese, stirring until melted into the sauce.
  • Step #15 Add cooked pasta to skillet & toss with sauce.
  • Step #16 Adjust the amount of pasta added to the skillet according to how 'saucy' you like your dish.
  • Step #17 Spice up with salt, fresh ground pepper to taste.
  • Step #18 Garnish with extra grated parmasean & fresh parsley.
