Chicken Soup With Adzuki Beans, Escarole, And Sweet Potato Recipe

Ingredients
  • 1 zucchini, cubed
  • 1 tbsp dried thyme
  • 1 c dry adzuki beans
  • 1 tbsp dried rosemary
  • 1 c uncooked wild rice
  • 2 onions, cut into large chunks
  • 1 tsp dried sage
  • 1/3 medium head escarole, coarsely sliced
  • 1 yellow squash, cubed
  • 1 1/2 quarts chicken broth
  • 4 boneless, skinless chicken thighs
  • 1 tbsp bottled minced garlic
  • 1 large sweet potato, peeled & cubed

Directions
  • Step #1 Place the chicken broth in a large pot.
  • Step #2 Mix in the chicken thighs, wild rice, adzuki beans, onions, & garlic.
  • Step #3 Spice up with sage, thyme, & rosemary.
  • Step #4 Bring to a boil, reduce heat, & cook 1 hr.
  • Step #5 Remove chicken from the pot, shred with a fork, & set aside.
  • Step #6 Stir the sweet potato into the pot.
  • Step #7 Continue cooking about 5 mins, until sweet potato is slightly tender.
  • Step #8 Mix in the zucchini, yellow squash, & escarole.
  • Step #9 Continue cooking 15 mins.
  • Step #10 Return the shredded chicken to the pot.
  • Step #11 Cook until heated through.
  • Step #12 Increase the amount of broth if the soup seems too thick.
