Grilled Chicken, Red Onion, And Mint Kebabs Recipe

Ingredients
  • 1 tsp ground black pepper .
  • 1 tsp dried mint .
  • 1 tsp salt .
  • 4 garlic cloves, crushed .
  • 4 tbsps extra-virgin olive oil .
  • 1 bunch fresh mint .
  • 1 1/2 lbs boneless skinless chicken breast halves, cut into 1-inch pieces .
  • 1 red onion, cut into 1-inch pieces .
  • 1 tsp dried oregano .
  • 2 tbsps fresh lemon juice

Directions
  • Step #1 Mix chicken, 2 tbsps oil, salt, garlic, oregano, mint, & pepper in medium bowl.
  • Step #2 Let marinate 30 mins.
  • Step #3 Whisk remaining 2 tbsps oil & lemon juice in small bowl to mix.
  • Step #4 Prepare barbecue (medium-high heat).
  • Step #5 Pull off large mint leaves from stems.
  • Step #6 Alternate chicken, onion, & mint leaves on skewers; sprinkle with salt & pepper.
  • Step #7 Grill until chicken is just cooked through, turning & basting every once in awhile with oil-lemon mixture, about 9 mins.
  • Step #8 Serve Greek Salad alongside.
