Ingredients
  • 1 lb beef (with bone) .
  • 2 medium carrots, grated .
  • 10 oz tomato soup .
  • 1 small cabbage .
  • 19 oz tomatoes .
  • 1 large onion .
  • 8 peppercorns .
  • 1/4 star anise .
  • salt .
  • 1/2 c pot barley .
  • 3 quarts cold water .
  • 1 bay leaf .
  • heavy cream .
  • 1 large potato, cut in chunks .
  • parsley

Directions
  • Step #1 In 6 quart pot, mix water, beef with bones & pot barley.
  • Step #2 Boil for 40 mins til meat is nearly tender.
  • Step #3 Skim off foam every once in awhile.
  • Step #4 Coarsely shred cabbage, sliced onion, grate carrots & add to broth.
  • Step #5 Bring to a boil.
  • Step #6 Add spices & herbs.
  • Step #7 Boil 30 mins til vegetables are tender.
  • Step #8 Add potato with vegetables.
  • Step #9 Add canned tomatoes & tomato soup.
  • Step #10 Let simmer 10 mins.
  • Step #11 Remove from heat & add salt to taste.
  • Step #12 Add heavy cream when ready to serve.
