Chicken & Asparagus With Cous Cous Recipe

Ingredients
  • 2 chicken breast fillets, sliced .
  • couscous, to serve .
  • 1 c chicken stock, heated .
  • 1 c cherry tomatoes, halved or sliced tomatoes .
  • 1 tbsp butter .
  • 10 asparagus spears, cut into 1/3rds (or more if you like them) .
  • 1/4 c olives (more or less depending on taste) .
  • 1/2 c bacon, sliced .
  • 2 tbsps olive oil

Directions
  • Step #1 Heat oil & butter in large frypan, then add chicken pieces & cook this until golden.
  • Step #2 Throw in the bacon, olives (cut up if you wish), asparagus & 3/4 c of the tomatoes.
  • Step #3 Cook until chicken is tender & bacon is crisp.
  • Step #4 Pour in the chicken stock & remaining tomatoes & cook this until stock has formed a slightly thickened sauce.
  • Step #5 (Note, some or all of the chicken stock can be replaced with wine if preferred).
