Healthy Crab Salad Recipe

Ingredients
  • 10 Ritz crackers, crushed (reduced fat worked well) .
  • 1/4 onion, sliced fine .
  • 1 c celery, finely sliced .
  • 2 carrots, finely sliced (or grate if you prefer a less crunchy salad) .
  • iceberg lettuce, cleaned & leaves separated .
  • 4 tbsps Miracle Whip (to moisten & mix flavors) .
  • pepper, to taste .
  • 14 oz imitation crabmeat (or lobster) .
  • seasoning salt, to taste

Directions
  • Step #1 Into a large mixing bowl, flake or chop the seafood.
  • Step #2 If you have crab sticks, you may want to use scissors to cut the crab into bite size pieces.
  • Step #3 Add the celery, crackers, onion, carrots, & Miracle Whip.
  • Step #4 Stir to mix.
  • Step #5 If the salad seems too dry, add extra Miracle Whip.
  • Step #6 Taste & add extra seasoning salt & pepper to taste.
  • Step #7 Serve in iceberg lettuce leaves.
