Ingredients
  • 1 tbsp ginger, finely grated .
  • 1 lb sweet potatoes, sliced .
  • 4 oz green beans .
  • 10 oz carrots, sliced .
  • 1/2 c skim milk .
  • 6 oz cauliflower, sliced .
  • 4 oz part-skim ricotta cheese, drained .
  • 11 oz shortcrust pastry .
  • 2 oz fat-free parmesan cheese .
  • 3 tbsps chives, sliced .
  • 1 red pepper, sliced

Directions
  • Step #1 roll out pastry & use to line 6 one c capacity pie dishes.
  • Step #2 boil, steam or microwave sweet potatoes until soft.
  • Step #3 crain & place this in bowl, add milk & mash.
  • Step #4 stir in the ricotta.
  • Step #5 boil, steam or microwave carrots until soft.
  • Step #6 add to sweet potatoes.
  • Step #7 add cauliflower, beans, red pepper, chives, & ginger & stir this to mix.
  • Step #8 dived vegetable mixture between pastry cases, sprinkle with parmesan & bake 400F for 30 min or until pastry is golden & filling cooked.
