Low Fat Pumpkin Chocolate Chip Cookies Recipe

Ingredients
  • 1 (14 oz) can pumpkin puree .
  • 1/2 c sugar .
  • 3 c whole wheat flour .
  • 1/2 c unsweetened applesauce .
  • 1 tsp baking soda .
  • 1/2 c Splenda granular (or use all sugar) .
  • 1 tsp vanilla .
  • 1 c mini chocolate chips .
  • 1 tbsp cinnamon .
  • 1 tsp pumpkin pie spice .
  • 1/4 c egg whites or 1 whole egg .
  • 2 tsps baking powder

Directions
  • Step #1 Preheat oven to 375 degrees.
  • Step #2 Line a large baking sheet with parchment paper.
  • Step #3 In a large mixing bowl, egg whites, stir this together applesauce, pumpkin, splenda, sugar, & vanilla until well mixed.
  • Step #4 Stir in chocolate chips.
  • Step #5 In a smaller bowl, baking powder, cinnamon, stir this together baking soda, flour, & pumpkin pie spice.
  • Step #6 Add dry ingredients to wet, & stir until well mixed.
  • Step #7 Drop by heaping, rounded tbsps onto parchment lined baking sheet.
  • Step #8 Bake for 12 mins.
  • Step #9 Let cool on baking sheet for several mins before transferring to a cooling rack.
