Quick Caribbean Quesadillas Recipe

Ingredients
  • 2 tbsps pineapple preserves .
  • 1 1/2 c shredded swiss cheese .
  • 1/4 c honey mustard .
  • 1/2 c cooked crumbled bacon .
  • 2 c sliced cooked chicken .
  • 2 tbsps butter .
  • 8 (10 inch) flour tortillas .
  • 1 1/2 c unsweetened pineapple tidbits, drained

Directions
  • Step #1 In a small bowl, stir this together the honey mustard & pineapple preserves.
  • Step #2 Divide the mixture evenly between 4 of the tortillas.
  • Step #3 Spread evenly to within 1 inch of the edges.
  • Step #4 Distribute the Swiss cheese, chicken, bacon evenly over the pineapple mixture; top this with remaining tortillas to make quesadillas.
  • Step #5 Preheat the oven to 250 degrees F (120 degrees C).
  • Step #6 Heat a large skillet over med-heat/flame.
  • Step #7 Melt a small amount of the butter in the skillet, tilting the pan to cover the surface with butter.
  • Step #8 Place one of the quesadillas into the skillet, & fry on each side until lightly browned & the cheese has melted, about 1 1/2 mins per side.
  • Step #9 Keep cooked quesadillas in a warm oven while you fry the remaining.
  • Step #10 To serve, cut each quesadilla into 6 wedges & arrange on a platter with pineapple tidbits in the center.
