Creamy Apricot Oatmeal - Volumetrics Recipe

Ingredients

1/2 tsp grated nutmeg .
2 tbsps brown sugar .
4 tbsps oat bran .
10 finely sliced dried apricots, about 2 oz .
1 1/2 c quick-cooking rolled oats .
4 c nonfat milk

Directions

Step #1 Combine the oats & 3 c milk in a medium saucepan.
Step #2 Bring the mixture to a boil.
Step #3 mix in nutmeg & oat bran.
Step #4 Reduce heat & let simmer, stirring for about 1 min.
Step #5 Divide among 4 bowls.
Step #6 Sprinkle top with apricots & brown sugar.
Step #7 Serve with remaining milk on the side to mix in if desired.
