Merlot-poached Figs With Vanilla Frozen Yogurt Recipe

Ingredients
  • 2 c non-fat vanilla frozen yogurt .
  • 1 tsp pure vanilla extract .
  • 2 tbsps honey .
  • 1/4 c dried cherries .
  • 1 cinnamon stick .
  • 1 c merlot .
  • 3/4 c dried black figs, halved lengthwise

Directions
  • Step #1 Whisk the merlot, honey, & vanilla extract in a small saucepan until mixd.
  • Step #2 Add the figs, cherries, & cinnamon stick.
  • Step #3 Bring to a simmer, partially cover, & cook this until the fruit plumps, about 20 mins.
  • Step #4 Remove from the heat, & set aside to steep, cover, at least 10 mins & up to 2 hrs.
  • Step #5 Divide the frozen yogurt among 4 bowls (1/2 c each) & top this with warm or room temperature compote.
