Cornish Game Hens With Garlic And Rosemary Recipe

Ingredients
  • 4 sprigs fresh rosemary, for garnish
  • salt & pepper to taste
  • 4 sprigs fresh rosemary
  • 1/3 c white wine
  • 3 tbsps olive oil
  • 1 lemon, quartered
  • 1/3 c low-sodium chicken broth
  • 4 Cornish game hens
  • 24 cloves garlic

Directions
  • Step #1 Preheat oven to 450 degrees F (230 degrees C).
  • Step #2 Rub hens with 1 tbsp of the olive oil.
  • Step #3 Lightly season hens with salt & pepper.
  • Step #4 Place 1 lemon wedge & 1 sprig rosemary in cavity of each hen.
  • Step #5 Arrange in a large, heavy roasting pan, & arrange garlic cloves around hens.
  • Step #6 Roast in preheated oven for 25 mins.
  • Step #7 Reduce oven temperature to 350 degrees F (175 degrees C).
  • Step #8 In a mixing bowl, chicken broth, whisk together wine, & remaining 2 tbsps of oil; pour over hens.
  • Step #9 Continue roasting about 25 mins longer, or until hens are golden brown & juices run clear.
  • Step #10 Baste with pan juices every 10 mins.
  • Step #11 Transfer hens to a platter, pouring any cavity juices into the roasting pan.
  • Step #12 Tent hens with aluminum foil to keep warm.
  • Step #13 Transfer pan juices & garlic cloves to a medium saucepan & boil until liquids reduce to a sauce consistency, about 6 mins.
  • Step #14 Cut hens in half lengthwise & arrange on plates.
  • Step #15 Spoon sauce & garlic around hens.
  • Step #16 Garnish with rosemary sprigs, & serve.
