Sweetcorn Risotto Cakes Recipe

Ingredients
  • 2 tbsps olive oil .
  • 2 tbsps parmesan cheese .
  • 2 garlic cloves, crushed .
  • 6 spring onions, sliced .
  • 400F g risotto rice .
  • 2 tbsps olive oil, for frying .
  • 1 liter vegetable stock .
  • 120 g sweetcorn, defrosted .
  • 2 tbsps plain flour

Directions
  • Step #1 Place the 2 tbsp olive oil in a pan & fry the onion & garlic until soft.
  • Step #2 Add the rice & mix well, add the stock a little at a time & stirring until all the stock has been used.
  • Step #3 Add the sweetcorn & cheese & mix well.
  • Step #4 Refrigerate mix until cold & mold into patties, dusting each with flour.
  • Step #5 Shallow fry the cakes in the extra olive oil until brown on both sides (about 4 mins).
