Robust Beet Salad By Dr Andrew Weil Recipe

Ingredients
  • salt .
  • 1/4 c rice vinegar or cider vinegar .
  • 1 tsp wasabi powder (Japanese horseradish) .
  • 1 tsp mustard powder .
  • 3 lbs beets .
  • 1 large onion, sliced thin .
  • 1/4 c water .
  • 1 tbsp extra-virgin olive oil .
  • 1/4 c brown sugar

Directions
  • Step #1 Cut off the beet tops about an inch above the beet.
  • Step #2 In a large pot cover the beets with three inches of cold water & bring to a boil.
  • Step #3 Cover up & boil over med-heat/flame until tender, about 45 mins.
  • Step #4 Drain the beets under cool running water.
  • Step #5 Slip off their skins.
  • Step #6 Trim off stems & root ends & slice the beets thinly.
  • Step #7 Combine the sliced beets in a bowl with the other ingredients, add salt to taste, & chill in the fridge.
  • Step #8 Stir several times.
  • Step #9 This salad will keep for a week in the refrigerator.
