Brandied Chicken Breasts (treasure Trove #3) Recipe

Ingredients
  • 1/2 c apricot brandy .
  • 3/4 c chicken broth .
  • 1/2 c sour cream .
  • 1/2 c flour .
  • 1/4 tsp salt .
  • 4 boneless skinless chicken breasts .
  • 1/4 tsp tarragon leaves (crushed) .
  • 1/4 tsp black pepper .
  • 1/4 c butter

Directions
  • Step #1 Preheat a lrg skillet on low-heat & melt butter in it.
  • Step #2 Meanwhile (in a shallow dish) sift together the flour, salt, pepper & tarragon.
  • Step #3 Add chicken (1 piece at a time) & dredge to coat.
  • Step #4 Add the chicken to the skillet & cook for 10 min on ea side or till the chicken is browned.
  • Step #5 Add the brandy & the chicken broth.
  • Step #6 Stir & then let simmer for 10 more min or till the chicken is fork-tender.
  • Step #7 Remove the chicken from the pan & place on a warmed plate.
  • Step #8 Add the sour cream to the skillet & stir this to warm.
  • Step #9 Pour the warm sauce over the chicken & serve as soon as possible.
