Cranberry Swirl Coffee Cake Recipe

Ingredients
  • 2 c all-purpose flour
  • 2 eggs
  • 1 c sour cream
  • 1 (16 oz) can whole berry cranberry sauce, divided
  • 2 tbsps milk
  • 3/4 c confectioners' sugar
  • 1 tsp almond extract
  • 1/3 c sliced walnuts
  • GLAZE:
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 c sugar
  • 1/2 tsp salt
  • 1/2 c butter or margarine, softened
  • 1/2 tsp vanilla extract

Directions
  • Step #1 Sprinkle top walnuts into a greased 10-in.
  • Step #2 fluted tube pan.
  • Step #3 In a mixing bowl, cream butter & sugar.
  • Step #4 Add eggs, one at a time, beating well after each.
  • Step #5 Stir in almond extract.
  • Step #6 Combine the dry ingredients; add to creamed mixture alternately with sour cream.
  • Step #7 Spread half of the batter over walnuts.
  • Step #8 Top with half of the cranberry sauce.
  • Step #9 Repeat layers.
  • Step #10 Bake at 350 degrees F for 50-55 mins or until a toothpick inserted near the center comes out clean.
  • Step #11 Cool for 10 mins before removing from pan to a wire rack to cool completely.
  • Step #12 In a small bowl, mix glaze ingredients until smooth; drizzle over cake.
