Baked Bean Salad Recipe

Ingredients
  • 1 sprig fresh parsley (optional) .
  • 1/4 c sliced green onions .
  • 1 (21 oz) can baked beans .
  • 1 hard-boiled egg, peeled & sliced .
  • 1/4 tsp salt .
  • 4-6 tbsps olive oil .
  • 1 tbsp prepared mustard .
  • 2 small tomatoes, peeled & seeded .
  • 1/4 tsp pepper .
  • 1/2 c stuffed green olives, sliced .
  • 2 tbsps red wine vinegar

Directions
  • Step #1 1.
  • Step #2 Drain beans & place this into a large bowl.
  • Step #3 2.
  • Step #4 Cut tomatoes into strip, about 1/3 in thick.
  • Step #5 Add to bowl with beans.
  • Step #6 Add olives & green onion.
  • Step #7 Fold together carefully.
  • Step #8 3.
  • Step #9 In a small bowl, whisk together the vinegar & mustard; slowly whisk in the oil unil an emussified mixture is formed.
  • Step #10 Add salt & pepper & mix well.
  • Step #11 4.
  • Step #12 Pour dressing over vegetables.
  • Step #13 Fold together until well mixed.
  • Step #14 5.
  • Step #15 Before serving, garnish with sliced egg & a sprig of parsley if used.
