Refreshing Coconut Fruit Salad Recipe

Ingredients
  • 2 oz cream cheese, softened .
  • 1/2 c sweetened flaked coconut .
  • 1/2 c sweetened flaked coconut (toasted) .
  • 2 oranges, peeled & chunked .
  • 1/4 c coconut milk .
  • 2 large sweet apples, chunked .
  • 2 tsps sugar, to taste .
  • 1 banana, sliced .
  • 1/2 c pineapple chunks (fresh or canned & drained)

Directions
  • Step #1 Mix apples, oranges, pineapple, & banana In a large-ish bowl.
  • Step #2 Add toasted* & untoasted coconut, along with coconut milk.
  • Step #3 To soften the cream cheese, zap it in the microwave for about 5-10 seconds.
  • Step #4 With a fork in a small bowl, cream the cheese with the sugar, add more if desired to taste.
  • Step #5 Dump the cream cheese on top of the fruit, & mix thoroughly to incorporate.
  • Step #6 Serve at about room temp or chilled.
  • Step #7 * To toast the coconut, spread on an ungreased pan & bake in a 300F degree oven just till lightly brown, around 3-5 mins.
