Ingredients
3/4 c light olive oil .
1 c artificial sweetener, divided .
1 tsp baking powder .
1/2 c Egg Beaters egg substitute, room temp .
1/2 c unsweetened cocoa powder .
1 tsp vanilla extract .
1/8 tsp salt .
1 c natural almonds .
3/4 c all-purpose flour .
2 large egg whites, room temp .
1/4 c fruit spread, seedless (optional)
Directions
Step #1 Preheat oven to 350° & coat a 10-inch springform pan with cooking spray.
Step #2 sprinkle flour to coat pan & shake out excess.
Step #3 In food processor/blender, finely chop almonds (or walnuts) with 2 tbs of the Splenda; set aside.
Step #4 In large bowl, beat egg beaters, egg whites & vanilla on medium speed until foamy.
Step #5 Gradually beat in rest of the Splenda, 1 tbsp at a time until mixture is thick & pale in color (about 5 mins).
Step #6 Turn mixer to lowest speed & add oil in a slow steady stream.
Step #7 In a different bowl, cocoa, sift together flour, baking powder & salt.
Step #8 Fold in almond mixture.
Step #9 Gently fold in egg mixture & mix until just mixd.
Step #10 Pour into springform pan & bake 30 to 35 mins or until edges begin to pull away from sides of pan & the center is firm to the touch.
Step #11 Cool on a rack.
Step #12 In a small saucepan, over low heat/flame, melt fruit spread until smooth.
Step #13 Spread over cake & let this stand 30 mins or until spread is set.
Step #14 Remove torte from pan before serving.
