• 4 eggs, beaten .
• 1 c celery .
• salt, to taste .
• pepper, to taste .
• 2 c hash browns, fresh or frozen hash browns .
• onions, to taste .
• 1 c cheese, grated, your choice .
• 1 tbsp butter

• Step #1 Saute the onions & celery in the butter on medium heat.
• Step #2 Add the hashbrowns & cook this until lightly browned.
• Step #3 Pour the eggs over the mixture & cook this until done.
• Step #4 Sprinkle top cheese when mixture is nearing the end.
