48 Hour Marinated Shrimp Recipe

Ingredients
  • 1 c red wine vinegar .
  • 1 tbsp grated lemon rind .
  • 1/2 tsp salt .
  • 1 yellow bell pepper .
  • 7 1/2 c water .
  • 1 c vegetable oil .
  • 1 tbsp hot sauce .
  • 3 lbs unpeeled large raw shrimp .
  • 1 tbsp white wine worcestershire sauce .
  • 1/2 c sliced fresh basil .
  • 1 tbsp Dijon mustard .
  • 3 tbsps sugar .
  • 3 tbsps fresh lemon juice .
  • 2 garlic cloves, pressed .
  • 2 small red onions, sliced

Directions
  • Step #1 1.
  • Step #2 Bring 7 1/2 c water to a rolling boil.
  • Step #3 Add the shrimp, & cook 2 to 3 mins or until shrimp turn pink.
  • Step #4 Do not overcook.
  • Step #5 Drain & rinse with cold water.
  • Step #6 Ice the shrimp to cool, then peel & if desired, devein.
  • Step #7 2.
  • Step #8 Layer the shrimp, red onion slices & bell pepper slices in an airtight container.
  • Step #9 3.
  • Step #10 Whisk together vegetable oil & next 9 ingredients; pour over shrimp.
  • Step #11 Cover up & chill 48 hrs, stirring every once in awhile.
  • Step #12 4.
  • Step #13 Stir in 1/2 c sliced basil 1 hr before serving.
