Grilled Thai Beef Salad Recipe

Ingredients
  • 1/2 c red onions, thinly sliced .
  • 3 c romaine lettuce, shredded .
  • 1/2 cucumber, thinly sliced .
  • 1 serrano chili, seeded & sliced .
  • 1 tbsp ginger, minced .
  • 3 tbsps lime juice .
  • 3/4 lb flank steaks, fat trimmed off .
  • 3 tbsps water .
  • 1/4 tsp salt .
  • 3/4 c fresh mint, choppped .
  • 3 tbsps soy sauce .
  • 1 1/4 c carrots, shredded .
  • 1 red bell pepper, seeded & sliced

Directions
  • Step #1 Grill steak until it has an internal temperature of 145 deg.
  • Step #2 for medium-rare.
  • Step #3 Let steak stand for 5 min before slicing thinly against the grain.
  • Step #4 Place 1/4 c carrot, ginger, lime juice,soy sauce, water, & chile in a food processor/blender & process until carrots & chile are very finely minced.
  • Step #5 Mix together remaining carrots, steak, cucumber, bell pepper, lettuce, mint & onion.
  • Step #6 Add processed dressing & serve.
