Barefoot Contessa's Fresh Peach Bellinis Recipe

Ingredients

1 tsp sugar .
1 tbsp fresh lemon juice .
2 ripe peaches, seeded & sliced .
1 (750 ml) bottle sparkling wine, chilled

Directions

Step #1 Place the peaches, lemon juice, & sugar in the bowl of a food processor/blender fitted with a steel blade & process until smooth.
Step #2 Press the mixture through a sieve & discard the peach solids in the sieve.
Step #3 Place 2 tbsps of the peach puree into each Champagne glass & fill with cold prosecco (sparkling wine).
Step #4 Serve as soon as possible.
