Step #1 Allow beef roast to come to about room temp before cooking (about 2 hrs out of the frig.
Step #2 ).
Step #3 In small bowl, thyme, pepper, rosemary, mix butter with salt, & garlic.
Step #4 Spread butter mixture evenly over all side of roast.
Step #5 Preheat oven to 325F degrees & place rack in center of oven.
Step #6 Heat olive oil in large skillet over medium-high heat for one min.
Step #7 Sear roast in skillet on all sides until well-browned (about 8-10 mins).
Step #8 Transfer roast, bone-side down, to a roasting pan with rack.
Step #9 Roast beef until thermometer inserted in center reads 125 degrees for rare (about 2 hrs), 135 degreed for medium-rare, (about 2 1/4 hrs), or 145 degrees for medium (about 2 1/2 hrs).
Step #10 Let meat rest at least 15 mins before carving.
