Asian Mushroom Soup Recipe

Ingredients
  • 2 shallots, peeled & thinly sliced .
  • 2 inches piece fresh ginger, peeled & thinly sliced .
  • 2 quarts reduced-sodium chicken broth .
  • 2 carrots, peeled, cut in half lengthwise, then in half crosswise, & very thinly sliced .
  • 5 oz cremini mushrooms, thinly sliced .
  • 1 small napa cabbage, outer leaves only, roughly torn .
  • 6 scallions, thinly sliced .
  • 3 tbsps soy sauce .
  • 2 tbsps fish sauce (optional) .
  • dark sesame oil .
  • 10 small shiitake mushrooms, cleaned & left whole .
  • 20 snow pea pods

Directions
  • Step #1 Combine the broth, soy sauce, fish sauce, ginger & shallots In a large-ish saucepan or stockpot.
  • Step #2 Heat over med-heat/flame & bring to a simmer.
  • Step #3 Add the remaining ingredients except the snow peas, scallions & sesame oil.
  • Step #4 Simmer 30 mins, then add the snow peas.
  • Step #5 Cook just a few mins longer, until the snow peas have softened slightly but are still bright green.
  • Step #6 Add the scallions to the pot, remove this from heat & ladle into serving bowls.
  • Step #7 Drizzle a bit of sesame oil over the top of each serving.
